Raw Vegan Pecan Cookies
You won’t need to turn the oven on to make these delicious cookies, high in protein and good fats.
Ingredients
- 1 cup pecans
- ¼ cup unsweetened shredded coconut
- ¼ cup cocoa or cacao powder
- 10 medjool dates, pitted
Method
- Place all ingredients into a food processor and process until the mixture is smooth and it comes together in a ball. You may need to add a little water. This depends on how much moisture is in the dates and nuts you use.
- Roll the mixture into a log and place it in the freezer for a couple of hours. Slice the log into round cookie shapes and serve.
