Serves 2 2 pork chops 2 small parsnips, peeled and chopped 1 large carrot, peeled and chopped 1 orange, peeled and sliced ½ red pepper, sliced 1 teaspoon ground cumin 1 teaspoon ground coriander Salt and pepper, to taste 1 tablespoon ghee, olive oil or coconut oil Preheat the oven to 375ºF. Place all the vegetables onto a lined baking tray and drizzle with half the ghee or oil. Sprinkle with salt and pepper. Place the vegetables and orange into the oven and roast for approximately 25 minutes. In the meantime sprinkle the pork chops with the spices, salt and pepper. Heat the remaining oil or ghee in a skillet and lightly brown both sides of the chops. Remove the tray of vegetables from the oven and place the chops on top. Return it to the oven until the chops are well cooked through. Serve.
