This is delicious served over cold roast meat along with a salad. 8 very ripe tomatoes, chopped 2 tablespoons sugar free tomato paste 1 red onion, finely chopped 3 cloves garlic, crushed 2 tablespoons olive oil 2 tablespoons apple cider vinegar 1 teaspoon dried oregano A few drops of liquid stevia (optional) Salt and pepper Heat the oil in a medium pot on the stove. Add the garlic and onion. Cook gently while stirring until the onion has softened. Add the tomato paste and oregano and stir well. Add all remaining ingredients and simmer the mixture for approximately 20 minutes or until thickened and fragrant. Allow the mixture to cool and then store in a glass jar in the fridge.
