Serves 4 as a side salad 2 broccoli florets ½ red onion, sliced finely ½ cup chopped raw almonds ½ cup cherry tomatoes, halved 2 boiled eggs, sliced 2 tablespoons apple cider vinegar 2 tablespoons olive oil Cut broccoli into bite sized pieces and steam for approximately 5 minutes, or until it turns bright green and has softened. Place all remaining ingredients except the oil and vinegar in a serving bowl. Combine oil and vinegar in a small bowl and whisk together well. Add broccoli to salad, toss and then drizzle with dressing and serve.
