Serves 1 Ingredients
  • 2 eggs, whisked
  • 2 bananas, mashed
  • 1 medium apple, very finely diced
  • 2 tablespoons peanut butter (choose a brand where peanuts are the only ingredient)
  • 1 teaspoon ground cinnamon
  • 1 tablespoon coconut oil
Method Mix eggs and mashed bananas together well. Add all remaining ingredients except coconut oil. Cook the pancakes over medium heat in coconut oil until cooked on both sides. If you make them smaller than regular pancakes they will hold together more easily. Serve for breakfast or dessert.
