This makes a lovely breakfast or dessert Serves 1

Ingredients

1 finely chopped apple 1 fresh medjool date, finely chopped 1 tablespoon slivered almonds 1 ½ teaspoons water ¼ teaspoon cinnamon 2 tablespoons chia seeds ¼ cup almond or other milk

Method

Combine the chia seeds with the almond milk and stir well. Cover the mixture and place it in the fridge overnight to thicken. Combine chopped apple, date, cinnamon and water in a small saucepan. Cook mixture over a gentle heat until the apple is softened. Stir in the slivered almonds. Spoon apple mixture over the chia pudding and serve.
