Avocado And Tuna Salad

A quick, easy and delicious low carb lunch that will leave you feeling satisfied for hours.

Serves 1


  • 1 large handful arugula leaves
  • ½ cup cherry tomatoes, sliced in half
  • ½ Lebanese cucumber, sliced
  • ½ medium avocado, diced
  • 2 tablespoons hemp seeds
  • 5 oz canned tuna in brine, drained and flaked
  • 1 tablespoon fresh lemon or lime juice
  • 2 tablespoons olive oil


  1. Combine all salad ingredients in a bowl. Drizzle with lemon or lime juice and olive oil.
