Serves 4 as a side salad 2 ripe avocados, sliced 1/2 red onion, thinly sliced 1/3 cup toasted walnuts 2 large handfuls arugula (rocket) leaves 2 tablespoons olive oil 2 tablespoons organic apple cider vinegar Combine all ingredients except oil and vinegar in a serving bowl and toss gently. Drizzle oil and vinegar over the salad and serve.
