This is a delicious and healthy dessert Serves 4 2 oranges ¼ cup chopped pecans 1 teaspoon almond meal 1 can coconut milk (place it in the fridge overnight) ½ teaspoon vanilla essence Preheat the oven to 350ºF. Slice the oranges in half. Place each orange half into the cavity of a muffin pan. Place the pecans and almond meal into a food processor or spice grinder and blend until combined. Sprinkle this mixture over the orange halves and place them into the oven. Bake for 10 to 15 minutes, or until the topping is lightly browned. Allow the orange halves to cool. Take the can of coconut milk out of the fridge. Discard the watery portion and place the thick cream portion into a medium bowl. Add the vanilla essence. Whip the coconut cream with electric beaters until it is thickened. Spoon cream over orange halves and serve.
