Beets help to detoxify your liver and gallbladder, making them an excellent choice after the holiday season.

Serves 4

Ingredients

  • 4 medium beets, washed and scrubbed well
  • 1 tablespoon balsamic vinegar
  • ½ teaspoon dried thyme
  • 2 tablespoons natural fat of your choice, melted (eg. Duck fat, ghee, olive oil or coconut oil)
  • ¼ teaspoon salt
  • 1 minced garlic clove (optional)

Method

  • Preheat the oven to 375 degrees F.
  • Grease or line a baking tray.
  • Cut the beets into wedges. Arrange them on the baking tray.
  • Drizzle oil and vinegar over the beets and then sprinkle with salt and thyme.
  • Bake in the oven for approximately 40 minutes, or until softened.
