Serves 4 as a side dish 1 small pumpkin ¼ cup freshly squeezed orange juice ¼ cup balsamic vinegar ¼ cup olive oil Salt and pepper to sprinkle on top Preheat the oven to 395ºF. Cut the pumpkin in half and remove the seeds. Cut the halves in half and keep cutting until you have slices of pumpkin approximately a couple of inches thick. Arrange the slices on a greased or lined baking tray. Combine vinegar, juice and oil together in a small bowl and whisk well. Pour dressing over pumpkin slices and sprinkle with salt and pepper. Bake pumpkin covered in foil for 20 minutes. Remove the foil and continue baking until softened and browned. Try to turn the pumpkin slices over a few times during the cooking process. Serve warm.
