Cucumber and mint salad


This is a cooling and refreshing salad. Serves 4 4 Lebanese cucumbers, sliced ½ cup fresh mint leaves, sliced ¼ cup fresh parsley, sliced 1 cup cherry tomatoes, sliced in half 1 garlic clove, crushed ¼ cup lime juice 2 tablespoons olive oil Place all ingredients into a serving bowl. Warm broccoli salad


Serves 4 2 heads broccoli, steamed until just softened and cut into bite sized pieces 1 red apple, chopped 1 large carrot, coarsely grated 1/3 cup pecans, toasted 1 cup cherry tomatoes, halved 2 tablespoons olive oil 2 tablespoons lemon juice Mix all ingredients gently in a bowl and serve.

Healthy gallbladder juice

Balsamic Vinaigrette


This is delicious splashed over a salad or hot cooked vegetables. ¾ cup balsamic vinegar 2 teaspoons Dijon mustard ¾ cup olive oil ½ teaspoon dried thyme Place all ingredients into a glass jar.
