Served as a lunch or dinner meal, this toss-it-all-in-a-baking-dish chicken dinner is a great source of satisfying protein and nourishing veggies.

Serves 2

  • 2 small chicken breasts
  • 2 Tbsp olive oil
  • 1 brown onion, sliced
  • 2 cloves garlic, sliced (optional)
  • 4 medium button squash, quartered
  • 14 ounce can diced tomatoes
  • 1 red capsicum, sliced
  • 1 Tbsp dried oregano
  • 1 tsp sweet paprika
  • ¼ cup black olives
  • 1 Tbsp capers

Method

  1. Preheat oven to 390ºF.
  2. Cook chicken breasts in 1 tablespoon of olive oil in a frying pan on high heat. Remove from heat when browned.
  3. Combine remaining ingredients together in a bowl. Transfer into a baking dish and top with chicken breasts.
  4. Cover with foil and bake for 20 minutes. Remove foil and bake a further 10 minutes.
  5. Serve with a salad.
