Chicken with Olives

This is an easy low carbohydrate meal that helps to reverse insulin resistance (Syndrome X).

Serves 2

2 small chicken breasts

2 Tbsp olive oil

1 brown onion, sliced

2 cloves garlic, sliced (optional)

4 medium button squash, quartered

14 ounce can diced tomatoes

1 Tbsp dried oregano

1 tsp sweet paprika

¼ cup black olives

1 Tbsp capers

Preheat oven to 390ºF. 

Cook chicken breasts in 1 tablespoon of olive oil in a frying pan on high heat. Remove from heat when browned. 

Combine remaining ingredients together in a bowl. Transfer into a baking dish and top with chicken breasts.

Cover with foil and bake for 20 minutes. Remove foil and bake a further 10 minutes.

Serve with a salad.
