Dairy Free Mashed Potatoes
A delicious, warm and comforting side dish for those who need to avoid dairy products.
Serves 4
Ingredients
- 1 ½ pounds potatoes, peeled and chopped
- 2 cloves garlic, crushed
- 1 teaspoon dried thyme
- ½ cup warm vegetable stock
- 1 tablespoon olive oil
- ½ teaspoon salt
Method
- Boil the potatoes in a large pot of water until soft. Drain well.
- While the potatoes are still warm, add remaining ingredients.
- Mash well, until the mixture is smooth.
