Ingredients

  • 1 ½ pounds potatoes, peeled and chopped
  • 2 cloves garlic, crushed
  • 1 teaspoon dried thyme
  • ½ cup warm vegetable stock
  • 1 tablespoon olive oil
  • ½ teaspoon salt

Method

  • Boil the potatoes in a large pot of water until soft. Drain well.
  • While the potatoes are still warm, add remaining ingredients.
  • Mash well, until the mixture is smooth.
