Serves 4

2 lbs chicken thigh fillets, cut into chunks
½ teaspoon salt
¼ teaspoon pepper
2 tablespoons garam masala
2 tablespoons curry powder
Grated zest from half a lemon
1 cup full fat Greek yogurt

Combine all ingredients except the chicken in a large glass bowl.

Add the chicken pieces and make sure each piece is well covered by the marinade.

Cover the bowl and place in the fridge for an hour.

Preheat the oven to 400ºF. Place the chicken pieces on a greased and lined oven tray. Bake for approximately 20 minutes, or until cooked through.

Serve with vegetables.
