This makes a delicious lunch

Serves 2

4 boiled eggs, sliced
½ avocado, sliced
2 slices smoked salmon, sliced
3 red radishes, sliced
2 large handfuls lettuce of your choice, shredded
1 large carrot, diced into matchsticks
2 tablespoons each of lemon juice and olive oil, for dressing

Place all salad ingredients into a bowl and toss gently.

Drizzle with dressing and serve.
