Grain free banana and pecan bread
This makes a lovely breakfast or afternoon tea.
½ cup coconut flour
½ cup almond flour
2 medium bananas, mashed
½ cup cooked, mashed pumpkin
½ cup melted ghee, butter or coconut oil
4 eggs, whisked
1 teaspoon baking soda
1 teaspoon ground cinnamon
1 teaspoon nutmeg
½ cup chopped toasted pecans
Stevia, xylitol, honey or other sweetener of choice
Preheat the oven to 350ºF.
Combine the flour, spices and baking soda together in a large bowl. Combine all remaining ingredients except the pecans, whisking them well. Pour the wet mixture into the bowl containing the dry mixture and stir well.
Stir in the pecans.
Pour the mixture into a greased or lined loaf pan and bake for approximately 45 minutes, or until a toothpick comes out clean.
