Grain Free Blueberry Muffins
Ingredients
- 3 cups almond meal
- 1 teaspoon baking soda
- 2 eggs, whisked
- ½ cup coconut oil, melted
- 1 teaspoon vanilla extract
- 2 teaspoons Nature Sweet natural sugar alternative
- ½ cup fresh or frozen blueberries
Method
- Preheat the oven to 355 degrees F.
- Place all the dry ingredients into a large bowl and mix gently.
- Place the eggs, coconut oil and vanilla extract into a small bowl and beat with an electric hand mixer for one minute.
- Pour egg mixture into bowl with dry ingredients and stir by hand until well combined. Stir blueberries into the mixture.
- Pour into greased or lined muffin tins and bake for approximately 20 minutes, or until cooked through.

The nuts with the lowest amount of oxalate per unit weight are, in order of decreasing amount, walnut, pecan, pistachio and macadamia.
These are not commonly found as ready prepared meal, so a high speed blender can be used to make the required amount of fresh nut meal every time you make up a batch of muffins.
