Ingredients

  • 3 cups almond meal
  • 1 teaspoon baking soda
  • 2 eggs, whisked
  • ½ cup coconut oil, melted
  • 1 teaspoon vanilla extract
  • 2 teaspoons Nature Sweet natural sugar alternative
  • ½ cup fresh or frozen blueberries

Method

  1. Preheat the oven to 355 degrees F.
  2. Place all the dry ingredients into a large bowl and mix gently.
  3. Place the eggs, coconut oil and vanilla extract into a small bowl and beat with an electric hand mixer for one minute.
  4. Pour egg mixture into bowl with dry ingredients and stir by hand until well combined. Stir blueberries into the mixture.
  5. Pour into greased or lined muffin tins and bake for approximately 20 minutes, or until cooked through.
