Here is a healthier version of a brownie that still tastes delicious. 1 large sweet potato, baked until very soft and then mashed 2 large eggs, lightly whisked ½ cup melted coconut oil or macadamia nut oil 12 drops liquid stevia, or 1/3 cup honey or maple syrup 2 tablespoons coconut flour 1 tablespoon baking powder 1 cup cocoa or cacao powder ½ cup toasted pecans, chopped Preheat the oven to 365ºF. Combine all the dry ingredients together in a bowl. Combine the wet ingredients and then add them to the bowl of dry ingredients. Stir the mixture until well combined. Pour mixture into a lined baking pan and bake for approximately 20 minutes. Baking time will vary depending on your pan and your oven.
