This is a great alternative to bread that's surprisingly delicious Serves 2 1 medium sweet potato 1 avocado, sliced 1 tablespoon olive oil Salt and cracked pepper Slice the sweet potato lengthwise into ¼ inch thin slices. Turn your toaster on high and place the sweet potato slices into the toaster as though they were slices of bread. With most toasters you will need to toast the sweet potato twice to ensure it is cooked and golden. Drizzle the toasted sweet potato with olive oil. Arrange avocado slices on top and then sprinkle with salt and pepper. Serve and enjoy!
