Greek Yogurt And Cucumber Dip
Makes 3 cups of dip
- 2 cups plain full fat Greek yogurt
- 1 peeled Lebanese cucumber
- 2 tablespoons fresh lime juice
- 1 teaspoon grated lime rind
- 1 tablespoon finely chopped fresh dill
- 1 tablespoon finely chopped fresh mint leaves
- 1 clove garlic, crushed (optional)
- Grate the cucumber finely in a medium sized bowl. Add all remaining ingredients and mix well.
- Cover the bowl and place in the fridge for 2 hours before serving.
