Serves 8 1 cup coconut cream 1 cup loosely packed basil 1 cup loosely packed spearmint 1 sweet pineapple, peeled 1 coconut Fresh raw fruits of choice, washed, skinned & chopped Break coconut and remove flesh, chop flesh into pieces. Juice the pineapple and combine the juice with coconut cream, basil and spearmint in a blender. Blend until smooth. Pour into plastic ice moulds and place in freezer until frozen (approx 3 hours) Once frozen, return to the blender, add flesh from coconut and blend until smooth. Serve with fresh fruit. Health tip - pineapple contains the enzyme bromelain which improves digestive and reduces inflammation.
