This is a delicious vegan and dairy free dressing you can use on your favourite salad. ½ cup raw, unsalted cashews, soaked overnight and drained 1 cup full fat coconut milk Juice of one lemon 1 tablespoon finely chopped fresh chives 1 clove garlic, minced 1 tablespoon finely chopped fresh parsley ½ teaspoon salt ¼ teaspoon pepper Place the cashews into a food processor and grind them into a paste. Slowly add the coconut milk, a few tablespoons at a time and keep blending until you have a smooth mixture. Add all remaining ingredients and blend until smooth.
