Recipe by Claire Georgiou, Naturopath, B.HSc ND These are great for a bite size snack for you or your kids. They are low allergen, gluten free, egg free, sugar free, dairy free (see note) and super easy! Prep: 20mins Fridge or freezer: for a few hours Serves:  12 Ingredients: ¾ cup of macadamia nuts 1 cup of desiccated coconut Juice and zest from ½ fresh lemon (can add more zest for a stronger lemon flavour) ½ tsp. vanilla extract Pinch of Himalayan or sea salt 2 Tablespoons of Synd X slimming protein powder 2 Tablespoons of coconut flour 3 Tablespoons of rice syrup 3 tablespoons of coconut oil Extra coconut for coating balls Directions:
  1. Process macadamia nuts in food processor
  2. Add the rest of the ingredients except the extra coconut for coating into the food processor until well combined and consistent. This mix should form a nice size ball.
  3. Take a teaspoon of the mixture and roll it into a ball and coat in the extra coconut.
  4. Place the balls in the fridge or freezer for a few hours.
  5. Store in an airtight container in fridge or freezer.
Note: You can use a dairy free protein powder – any sort pea protein, inca inchi, hemp or extra coconut flour.
