Serves 2 1 cup cooked brown rice ¼ cup toasted cashews 2 tablespoons toasted sesame seeds 1 clove garlic, crushed (optional) ½ small red onion, chopped ½ fresh chilli, finely chopped 2 boiled eggs, chopped 1 carrot (cut into matchsticks) ¼ cup shallots, sliced 1 cup tinned peas 1 cup shredded Chinese Cabbage Olive oil and lime juice as dressing It is best to purchase raw cashews and sesame seeds and toast them yourself at home. Cashew nuts can be spread on a baking tray and toasted in a moderate oven until they become light golden in colour. Use the same method for sesame seeds but you will need to watch them constantly, as they can burn quickly. Combine all salad ingredients together in a bowl and mix well. Dress with desired quantity of olive oil and lime juice. Serve.
