Serves 4

Ingredients

  • 1 pound chicken pieces (approximately 1 inch sized)
  • 2 tablespoons olive oil
  • 2 teaspoons dried oregano
  • 1 red chili pepper, sliced (optional, to taste)
  • 4 minced garlic cloves
  • 2 cups chopped broccoli florets
  • 2 cups spinach leaves
  • ¼ cup coconut cream
  • Salt and pepper, to your liking

Method

  1. Heat the olive oil in a large saucepan over medium heat. Add the chopped chicken pieces, oregano, garlic, salt and pepper.
  2. Cook while stirring until the chicken is cooked through.
  3. Add all remaining ingredients and cook until the broccoli has cooked to your liking.
  4. Serve
