Serves 2 1 large sweet potato, peeled 1 tablespoon pastured butter or ghee Salt and pepper, to taste Preheat the oven to 425ºF. Poke holes in the sweet potato with a sharp fork, cover it with foil and place into the oven. Cook for approximately an hour. Cooking time will depend on the size of the potato and moisture content. Once soft, place the hot potato into a bowl and add butter, salt and pepper. Mash until a smooth consistency is achieved.
