Pumpkin And Pecan Casserole
This is a delicious side dish when served with poultry or seafood.
Serves 4
Ingredients
- 2 cups mashed roast pumpkin
- 3 cups mashed roast sweet potato
- 2 eggs, whisked
- 2 tablespoons liquid coconut oil or ghee
- 1 tablespoon maple syrup
Topping Ingredients
- 1 cup chopped pecans
- 1 tablespoon melted coconut oil or ghee
- 1 teaspoon maple syrup
- 1 teaspoon pumpkin pie spice
Method
- Preheat the oven to 350 degrees F.
- Mix the casserole ingredients together well and place into a greased casserole dish.
- Mix all the topping ingredients together and sprinkle over casserole. Bake for approximately 30 minutes, or until lightly browned.
- Serve.
