Pumpkin And Pecan Casserole

This is a delicious side dish when served with poultry or seafood.

Serves 4

Ingredients

  • 2 cups mashed roast pumpkin
  • 3 cups mashed roast sweet potato
  • 2 eggs, whisked
  • 2 tablespoons liquid coconut oil or ghee
  • 1 tablespoon maple syrup

Topping Ingredients

  • 1 cup chopped pecans
  • 1 tablespoon melted coconut oil or ghee
  • 1 teaspoon maple syrup
  • 1 teaspoon pumpkin pie spice

Method

  1. Preheat the oven to 350 degrees F.
  2. Mix the casserole ingredients together well and place into a greased casserole dish.
  3. Mix all the topping ingredients together and sprinkle over casserole. Bake for approximately 30 minutes, or until lightly browned.
  4. Serve.
