Pumpkin Pancakes
Serves 2
Ingredients
- 4 eggs, whisked
- 1/2 cup mashed cooked pumpkin
- 1 tsp vanilla extract
- 1 tsp cinnamon
- 1/4 tsp ground cloves
- 1/4 tsp baking soda
- 1 tbsp melted ghee or coconut oil
Method
- Whisk the eggs with the pumpkin and ghee or oil.
- Add all remaining ingredients and whisk until well combined.
- Cook the pancakes in a pan over medium heat in some additional ghee or oil. When the pancakes start to bubble, flip them over and cook the other side.
- Serve with fresh fruit and coconut cream.
