Ingredients

  • 4 eggs, whisked
  • 1/2 cup mashed cooked pumpkin
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
  • 1/4 tsp ground cloves
  • 1/4 tsp baking soda
  • 1 tbsp melted ghee or coconut oil

Method

  1. Whisk the eggs with the pumpkin and ghee or oil.
  2. Add all remaining ingredients and whisk until well combined.
  3. Cook the pancakes in a pan over medium heat in some additional ghee or oil. When the pancakes start to bubble, flip them over and cook the other side.
  4. Serve with fresh fruit and coconut cream.
