Quinoa blueberry porridge
Serves 2
1 1/3 cups hemp milk
½ cup quinoa, soaked overnight and rinsed thoroughly
1 tablespoon chia seeds
1 teaspoon vanilla extract
½ cup fresh or frozen blueberries
In a small pot, heat the milk and bring it to the boil. Add the quinoa and chia seeds and reduce the heat to a gentle simmer. Cover the pot and simmer for approximately 15 minutes, or until the quinoa is cooked and thickened. You will need to stir the pot every so often while cooking.
Turn the heat off and add all remaining ingredients. Leave with the lid on for 5 minutes, then pour into bowls and serve.
