Sugar free cashew fudge
1 cup cashew butter
1/3 cup melted coconut oil
1 teaspoon vanilla extract
1/4 cup roasted cashew pieces
Place the first three ingredients into a food processor or blender and blend until smooth.
Stir cashew pieces into the mixture, pour it into a lined baking tray and place in the freezer.
Slice into squares and serve.

Just about every health food store or natural food market sells cashew butter. If you can't find it, almond butter is a good substitute.
You can also find it online.
