Tasty Goat Cheese Salad
Serves 4
Ingredients
- 1 large lettuce of your choice
- 1 cup cherry tomatoes, halved
- ½ cup pecans, toasted
- 1 cup fresh chèvre or other goat cheese, crumbled
- 2 spring onions (shallots), finely chopped
Dressing ingredients
- 1 Tbsp honey
- 3 Tbsp red wine vinegar
- 6 Tbsp extra virgin olive oil
- Salt and pepper to taste
On individual plates, combine the lettuce, tomatoes, pecans and spring onions. Sprinkle the goat cheese on top. Whisk the dressing ingredients together in a bowl, then pour over the salad before serving.
Goat cheese is easier to digest and less likely to produce allergies than cow’s milk cheese.
