Serves 2 ½ pound salmon ½ cup cherry tomatoes, halved 2 cloves garlic, crushed 1 tablespoon olive oil 1 teaspoon lemon juice 2 tablespoons finely chopped fresh parsley Preheat the oven to 300ºF. Rinse the salmon pieces and pat them dry with paper towels. Arrange the salmon on a greased or lined baking tray. Arrange all other ingredients on top of the salmon and bake in the oven for approximately 15 minutes, or until cooked to your liking. Serve with a salad or cooked vegetables.
