Serves 2

Two x 5oz cans tuna in water, drained
2 large handfuls arugula leaves
1 large carrot, grated
1 teaspoon poppy seeds
1 cup cherry tomatoes, halved
1 Lebanese cucumber, sliced
1 tablespoon tahini
¼ cup lemon juice
Salt and pepper

Combine all ingredients except lemon juice and tahini in a bowl and toss gently. Place lemon juice and tahini into a small bowl and whisk together well.

Pour over salad and serve.
