Ingredients

  • 2 large tomatoes, diced
  • ½ red onion, sliced
  • 1 large zucchini, grated
  • ½ red pepper, finely diced
  • 1 teaspoon dried thyme
  • 2 cloves garlic, crushed
  • 2 tablespoons olive oil
  • 1lb snapper fillets

Method

  1. Preheat the oven to 400 degrees F.
  2. Mix the tomatoes, zucchini, pepper, thyme, garlic ,and olive oil, then place in a baking dish. Bake for 15 minutes.
  3. Remove from the oven and place the snapper fillets on top of the mixture. Spoon some of the juices over the fish. Return to the oven and bake for another 15 to 20 minutes, or until the fish is cooked.
  4. Serve
