Mediterranean Pork Chops

Ingredients
- 2 pork chops
- 1 large carrot, peeled and chopped
- 1 red pepper, sliced
- 1 handful cherry tomatoes
- ¼ cup olives
- 1 teaspoon ground cumin
- Salt and pepper, to taste
- 1 tablespoon ghee, olive oil or pastured animal fat
Method
- Preheat the oven to 375ºF.
- Place all the vegetables onto a lined baking tray and drizzle with half the oil or fat. Sprinkle with salt and pepper.
- Place the vegetables and olives into the oven and roast for approximately 25 minutes.
- In the meantime sprinkle the pork chops with the cumin, salt and pepper.
- Heat the remaining oil or fat in a skillet and lightly brown both sides of the chops.
- Remove the tray of vegetables from the oven and place the chops on top. Return it to the oven until the chops are well cooked through.
- Serve.
