Ingredients

  • 2 pork chops
  • 1 large carrot, peeled and chopped
  • 1 red pepper, sliced
  • 1 handful cherry tomatoes
  • ¼ cup olives
  • 1 teaspoon ground cumin
  • Salt and pepper, to taste
  • 1 tablespoon ghee, olive oil or pastured animal fat

Method

  1. Preheat the oven to 375ºF.
  2. Place all the vegetables onto a lined baking tray and drizzle with half the oil or fat. Sprinkle with salt and pepper.
  3. Place the vegetables and olives into the oven and roast for approximately 25 minutes.
  4. In the meantime sprinkle the pork chops with the cumin, salt and pepper.
  5. Heat the remaining oil or fat in a skillet and lightly brown both sides of the chops.
  6. Remove the tray of vegetables from the oven and place the chops on top. Return it to the oven until the chops are well cooked through.
  7. Serve.​​​
