These patties can be made ahead of time and packed for a delicious healthy, high protein lunch.

Ingredients

  • 1 lb ground turkey
  • 2 tablespoons finely chopped fresh basil
  • ½ cup finely grated fresh pumpkin
  • 2 garlic cloves, finely chopped
  • 1 teaspoon dried Italian herbs
  • ½ teaspoon salt

Method

  1. Preheat the oven to 350ºF. Place all ingredients into a bowl and mash together well with your hands. Form the mixture into patties and place on a lined oven tray.
  2. Bake for approximately 25 minutes or until browned and cooked through. Serve with a salad or roasted vegetables.
