This delicious Beet Pesto can be used anywhere a pesto can go and all will benefit from this yummy superfood sauce.

Ingredients

  • One 15oz can of beets, drained
  • 1 clove garlic, finely chopped
  • 2 oz pine nuts
  • 3 oz parmesan cheese, finely grated
  • ½ teaspoon dried thyme
  • Olive oil

Method

  1. Process all ingredients in a food processor until you have a chunky paste.
  2. Add a drizzle of olive oil and process until the mixture reaches a desired consistency. You can add more or less olive oil, according to your preference.
  3. Serve over protein of your choice.
