Beet Pesto
This delicious Beet Pesto can be used anywhere a pesto can go and all will benefit from this yummy superfood sauce.
Ingredients
- One 15oz can of beets, drained
- 1 clove garlic, finely chopped
- 2 oz pine nuts
- 3 oz parmesan cheese, finely grated
- ½ teaspoon dried thyme
- Olive oil
Method
- Process all ingredients in a food processor until you have a chunky paste.
- Add a drizzle of olive oil and process until the mixture reaches a desired consistency. You can add more or less olive oil, according to your preference.
- Serve over protein of your choice.
