Carrot And Parsnip Soup
This is a warming soup that makes a lovely entree.
Serves 4
Ingredients
- 1 tablespoon olive oil
- 1 large brown onion, chopped
- 4 medium parsnips, peeled and chopped
- 2 large carrots, peeled and chopped
- 2 cloves garlic, crushed
- 1 small sweet potato, peeled and chopped
- 6 cups water, vegetable stock or bone broth
- 1 teaspoon salt
- 1 teaspoon dried thyme
Method
- Heat the olive oil in a large pot. Saute the onion and garlic until softened.
- Add the remaining ingredients except the liquid. Cook gently while stirring for 5 minutes.
- Add the liquid, put the lid on and simmer gently for around 40 minutes, or until all the vegetables are soft.
- You can either serve the soup chunky or blend it.
