This is a warming soup that makes a lovely entree.

Serves 4

Ingredients

  • 1 tablespoon olive oil
  • 1 large brown onion, chopped
  • 4 medium parsnips, peeled and chopped
  • 2 large carrots, peeled and chopped
  • 2 cloves garlic, crushed
  • 1 small sweet potato, peeled and chopped
  • 6 cups water, vegetable stock or bone broth
  • 1 teaspoon salt
  • 1 teaspoon dried thyme

Method

  1. Heat the olive oil in a large pot. Saute the onion and garlic until softened.
  2. Add the remaining ingredients except the liquid. Cook gently while stirring for 5 minutes.
  3. Add the liquid, put the lid on and simmer gently for around 40 minutes, or until all the vegetables are soft.
  4. You can either serve the soup chunky or blend it.
