Chicken With Olives
Served as a lunch or dinner meal, this toss-it-all-in-a-baking-dish chicken dinner is a great source of satisfying protein and nourishing veggies.
Serves 2
- 2 small chicken breasts
- 2 Tbsp olive oil
- 1 brown onion, sliced
- 2 cloves garlic, sliced (optional)
- 4 medium button squash, quartered
- 14 ounce can diced tomatoes
- 1 red capsicum, sliced
- 1 Tbsp dried oregano
- 1 tsp sweet paprika
- ¼ cup black olives
- 1 Tbsp capers
Method
- Preheat oven to 390ºF.
- Cook chicken breasts in 1 tablespoon of olive oil in a frying pan on high heat. Remove from heat when browned.
- Combine remaining ingredients together in a bowl. Transfer into a baking dish and top with chicken breasts.
- Cover with foil and bake for 20 minutes. Remove foil and bake a further 10 minutes.
- Serve with a salad.
