Chicken with Parsley Walnut Pesto
Serves 2
Ingredients
- 2 chicken breast fillets
- 1 bunch parsley, chopped
- ½ cup roasted walnuts, chopped
- 2 tablespoon pine nuts
- ⅓ cup extra virgin olive oil
- 2 tablespoons lemon juice
Method
- First cook the chicken. Place it in a large saucepan. Cover with cold salted water and bring to a gentle simmer.
- Simmer for approximately 10 minutes or until the chicken is cooked through.
- Make the pesto. Place all remaining ingredients into a food processor and blend until combined. You can make the texture to your liking.
- Shred the cooked chicken into bite sized chunks. Spoon pesto on top and serve with a salad.
