Ingredients

  • 2 chicken breast fillets
  • 1 bunch parsley, chopped
  • ½ cup roasted walnuts, chopped
  • 2 tablespoon pine nuts
  • ⅓ cup extra virgin olive oil
  • 2 tablespoons lemon juice

Method

  1. First cook the chicken. Place it in a large saucepan. Cover with cold salted water and bring to a gentle simmer.
  2. Simmer for approximately 10 minutes or until  the chicken is cooked through.
  3. Make the pesto. Place all remaining ingredients into a food processor and blend until combined. You can make the texture to your liking.
  4. Shred the cooked chicken into bite sized chunks. Spoon pesto on top and serve with a salad.
