Chickpea Salad
Serves 2 as a side salad
Ingredients
- 1 cup canned chickpeas
- ¼ cup fresh parsley, finely diced
- ½ cup cherry tomatoes, sliced
- ¼ cup goat or sheep feta, diced
- 1 tablespoon lemon juice
- 1 tablespoon olive oil
Method
Mix all salad ingredients in a bowl. Drizzle with lemon juice and olive oil and serve.
