Ingredients

  • 2 cooked chicken breasts, shredded (or other leftover chicken)
  • 1 large avocado, pitted and diced
  • 1 cup cherry tomatoes
  • ¼ red onion, finely chopped
  • 2 tablespoons finely chopped parsley
  • ¼ cup lime or lemon juice
  • 2 tablespoons olive oil
  • Salt and pepper, to taste
  • Sesame seeds (optional)

Method

  1. Place all ingredients except citrus juice and oil in a large bowl and mix well.
  2. Drizzle with juice and oil, sprinkle with salt and pepper and toss.
  3. Serve.
