Creamy Chicken And Avocado Salad

Ingredients
- 2 cooked chicken breasts, shredded (or other leftover chicken)
- 1 large avocado, pitted and diced
- 1 cup cherry tomatoes
- ¼ red onion, finely chopped
- 2 tablespoons finely chopped parsley
- ¼ cup lime or lemon juice
- 2 tablespoons olive oil
- Salt and pepper, to taste
- Sesame seeds (optional)
Method
- Place all ingredients except citrus juice and oil in a large bowl and mix well.
- Drizzle with juice and oil, sprinkle with salt and pepper and toss.
- Serve.
