Cumin Roasted Carrots
There's good reason to include carrots in your regular diet, as the science is very strong that they may help reduce your risk of chronic disease.
Serves 4 as a side dish
Ingredients
- 1 pound peeled carrots
- ½ tablespoon ground cumin
- ½ teaspoon dried oregano
- ¼ teaspoon salt
- 1 ½ tablespoons melted butter or ghee
Method
- Preheat the oven to 400 degrees F.
- Cut the carrots in half and then half again lengthwise. Arrange the carrots on a lined or greased baking tray.
- Mix the butter with the cumin, oregano and salt in a small bowl. Brush the mixture over the carrots, making sure they are all covered well.
- Roast the carrots in the oven for 15 to 30 minutes, or until softened and lightly browned. Cooking time will depend on the size of the carrots.
