There's good reason to include carrots in your regular diet, as the science is very strong that they may help reduce your risk of chronic disease.

Serves 4 as a side dish

Ingredients

  • 1 pound peeled carrots
  • ½ tablespoon ground cumin
  • ½ teaspoon dried oregano
  • ¼ teaspoon salt
  • 1 ½ tablespoons melted butter or ghee

Method

  • Preheat the oven to 400 degrees F.
  • Cut the carrots in half and then half again lengthwise. Arrange the carrots on a lined or greased baking tray.
  • Mix the butter with the cumin, oregano and salt in a small bowl. Brush the mixture over the carrots, making sure they are all covered well.
  • Roast the carrots in the oven for 15 to 30 minutes, or until softened and lightly browned. Cooking time will depend on the size of the carrots.
