The combination of dates and cashews provides an all natural and healthy caramel flavor.


  • 1 cup fresh Medjool dates, pitted
  • ½ cup tahini
  • 2 tablespoons cashew butter
  • Sesame seeds (optional)


  1. Place all ingredients in a food processor and process until well combined and smooth.
  2. Remove mixture and place into a bowl. If the mixture is too sticky, add enough almond or hazelnut meal to reduce stickiness. The texture will depend on how much moisture is present in the dates you use and how oily the tahini is. It is easily to handle the mixture if your hands are wet.
  3. Pour the mixture into the parchment-lined pan, sprinkle with sesame seeds(optional), then put the pan in the freezer for an hour or until solid.
  4. Remove the fudge and cut into squares.
  5. Store in freezer until ready to serve.
