Ingredients

  • 1 large soft pear
  • 1 medium overly ripe banana
  • 3 large eggs
  • 1 ¼ cups almond meal
  • ¼ cup coconut flour
  • 1/3 cup tapioca flour
  • ¾ teaspoon baking soda

Method

  1. Preheat the oven to 350 degrees F.
  2. Line an 8 X 4 inch baking pan with non stick paper.
  3. Blend the banana and pear together in a food processor until well blended.
  4. Add the rest of the ingredients to the food processor and process until smooth.
  5. Pour batter into baking pan and bake for 50 to 55 minutes.
