Ingredients

  • 2 eggs
  • ½ cup cottage cheese
  • ½ cup gluten free oats
  • 6 olives, sliced
  • ½ teaspoon dried oregano
  • Salt and pepper, to taste
  • Olive oil or other oil for cooking

Method

  1. Place the cottage cheese, oats and egg in a blender or food processor and blend until smooth. Stir in remaining ingredients except the oil.
  2. Heat a frying pan on medium heat. Add the olive oil. Add the pancake mixture. You may need to spread the mixture slightly with the back of a spoon. Cook until bubbles appear and then flip them over and cook the other side.
