Gluten Free Breakfast Pancakes

Ingredients
- 2 eggs
- ½ cup cottage cheese
- ½ cup gluten free oats
- 6 olives, sliced
- ½ teaspoon dried oregano
- Salt and pepper, to taste
- Olive oil or other oil for cooking
Method
- Place the cottage cheese, oats and egg in a blender or food processor and blend until smooth. Stir in remaining ingredients except the oil.
- Heat a frying pan on medium heat. Add the olive oil. Add the pancake mixture. You may need to spread the mixture slightly with the back of a spoon. Cook until bubbles appear and then flip them over and cook the other side.
