Gluten Free Cinnamon Rice Porridge
This is a quick and easy breakfast that uses leftover cooked rice.
Serves 2
Ingredients
- 1 cup cooked rice
- 1 ¼ cups milk of your choice
- 4 Medjool dates, pitted and chopped
- ¼ teaspoon cinnamon
- 1 teaspoon Nature Sweet natural sugar alternative
- Fresh fruit and nuts of your choice
Method
- Combine all ingredients except fresh fruit and nuts in a saucepan. Bring to the boil.
- Reduce the heat to a simmer, and cook while stirring for 5 to 8 minutes, or until thickened.
- Pour mixture into 2 bowls and top with fruit and nuts.
