This is a quick and easy breakfast that uses leftover cooked rice.

Ingredients

  • 1 cup cooked rice
  • 1 ¼ cups milk of your choice
  • 4 Medjool dates, pitted and chopped
  • ¼ teaspoon cinnamon
  • 1 teaspoon Nature Sweet natural sugar alternative
  • Fresh fruit and nuts of your choice

Method

  1. Combine all ingredients except fresh fruit and nuts in a saucepan. Bring to the boil.
  2. Reduce the heat to a simmer, and cook while stirring for 5 to 8 minutes, or until thickened.
  3. Pour mixture into 2 bowls and top with fruit and nuts.
