Grain Free Egg Muffins
These muffins are high in protein and great for breakfast on the run.
Ingredients
- 6 large eggs, whisked
- ¼ red onion, finely diced
- 3 oz pastured bacon, finely chopped
- 1 handful parsley, finely chopped
- ½ red pepper (capsicum), finely diced
- 1 tablespoon pesto
Method
- Preheat oven to 350 degrees F.
- Whisk the eggs with the pesto until well combined. Stir in remaining ingredients.
- Pour mix into greased muffin tins and bake for approximately 20 minutes, or until golden brown. Baking time will depend on the size of your muffin tins.
