These muffins are high in protein and great for breakfast on the run.

Ingredients

  • 6 large eggs, whisked
  • ¼ red onion, finely diced
  • 3 oz pastured bacon, finely chopped
  • 1 handful parsley, finely chopped
  • ½ red pepper (capsicum), finely diced
  • 1 tablespoon pesto

Method

  1. Preheat oven to 350 degrees F.
  2. Whisk the eggs with the pesto until well combined. Stir in remaining ingredients.
  3. Pour mix into greased muffin tins and bake for approximately 20 minutes, or until golden brown. Baking time will depend on the size of your muffin tins.
