Greek Style Pork Skewers
Makes 6 skewers
Ingredients
- 1 ½ lb pork, cut into bit sized cubes
- 1 zucchini, cut into one inch slices
- 1 red pepper (capsicum), cut into bite sized pieces
- 1 small red onion, cut into 1 inch pieces (optional)
- ¼ cup freshly squeezed lemon juice
- 4 tablespoons olive oil
- 1 tablespoon red wine vinegar
- 1 tablespoon dried oregano
- Salt and pepper, to taste
- 6 skewers
Method
- Place the lemon juice, olive oil, vinegar, salt, oregano and pepper into a glass bowl.
- Add the cubed pork and allow it to marinate in the fridge for 2 hours.
- Preheat the grill or BBQ to medium heat.
- Skewer the meat, zucchini, onion and pepper onto the skewers. Place on the grill or BBQ and cook for approximately 5 minutes each side, or until cooked through.
