Makes 6 skewers

Ingredients

  • 1 ½ lb pork, cut into bit sized cubes
  • 1 zucchini, cut into one inch slices
  • 1 red pepper (capsicum), cut into bite sized pieces
  • 1 small red onion, cut into 1 inch pieces (optional)
  • ¼ cup freshly squeezed lemon juice
  • 4 tablespoons olive oil
  • 1 tablespoon red wine vinegar
  • 1 tablespoon dried oregano
  • Salt and pepper, to taste
  • 6 skewers

Method

  1. Place the lemon juice, olive oil, vinegar, salt, oregano and pepper into a glass bowl.
  2. Add the cubed pork and allow it to marinate in the fridge for 2 hours.
  3. Preheat the grill or BBQ to medium heat.
  4. Skewer the meat, zucchini, onion and pepper onto the skewers. Place on the grill or BBQ and cook for approximately 5 minutes each side, or until cooked through.
